WHere is a home-style version of a beverage from our latest cocktail list. This is a large-volume prepared mix which is bursting full of tastes associated with Christmas time, which makes it ideal for hosting a festive gathering. Any leftover syrup you can use for breakfast cocktails, desserts, or to make another batch of the drink.
The Bikini Cocktail
Serves 10 people
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
Ingredients for the Cocktail (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Directions
To prepare the Cordial: Put every components in a pot, bring to a light boil, mixing so the sugar melts. Next, take off the heat and leave to cool down completely. Decant to a sealable bottle, close it and refrigerate it in the refrigerator, it will last for around one month.
To make Batch Mix: Pour all the spirits and syrup in a sizeable container, let it rest for an hour, then strain preferably using a fine cloth, to ensure it's completely strained.
To serve: Add 85ml from the cocktail base to a cocktail shaker filled with ice, and agitate carefully for one minute until cold. Pour into a cold coupe glass or similar, top with some cranberries and complete it by giving it a brief mist with the mandarin essence above the glass.
